Why We Chose This Topic
The issue of food and urbanism is still insufficiently covered in the existing literature, especially in the context of Asia. How food is produced, processed, transported, distributed, cooked, consumed, and wasted are deeply embedded into urban systems, and make us question the relationship between cities and countryside — which inevitably brings the issue of sustainability to the table. Food tells stories of history, identities, gender roles, colonial pasts, and politics, as well.
